  • 120g All-purpose flour
  • 4  eggs, room temperature
  • 113g unsalted butter, melted (or substitute with oil)
  • 200g granulated sugar
  • 1 tsp vanilla essence
  • 60g milk (optional, But you can use it for a softer texture)
  • Pinch of salt


Tip: You can use oil instead of butter and almond milk for a dairy-free version.

 

Science Corner: Always use room temperature eggs, because using cold eggs slow down the denaturation of albumin proteins in the egg white during whisking, which results in less air being trapped and less volume being created. Therefore, avoid using cold eggs.


Step-by-Step Instructions

Step 1 – Preheat the Oven

First, preheat the oven to 175 degrees. Then grease and line an 8-inch round pan. Preheating helps the cake bake and rise better.

 

Step 2 – Whip the Eggs and Sugar

Put the eggs and sugar in a bowl and mix well for 5 to 7 minutes until the color is pale and the texture is fluffy. This method traps air in the mixture. After whisking, the texture should be thick, meaning that when you lift the whisk, you should see soft peaks forming. And it will feel like soft butter to the touch.

Step 5 – Pour and Bake

Pour this batter into the prepared pan and level it from the top so that there are no bubbles etc. Then bake it for 25 to 30 minutes and remember that visual experience is also important so check by inserting a toothpick in the middle of the cake, if it comes out clear then it means the cake is fully baked.

 

Step 6 – Cool the Cake

Now take the cake out of the oven and let it cool in the pan for 10 minutes and then transfer it to a wire rack. Cooling the cake prevents sponge collapse.
